Best-Ever Healthy Apple Crisp * For the apples: * 5 granny smith apples * 1 tablespoon pure maple syrup * 3 tablespoons water * 2 teaspoons cinnamon * For the crumble topping: * 1 cup old-fashioned oats * 1/2 cup almond meal * 1/2 cup chopped almonds, walnuts, or pecans * 3/4 teaspoon cinnamon * 1/4 teaspoon salt * 1/4 cup melted coconut oil or butter * 1/4 cup pure maple syrup 1. Preheat oven to 350 degrees. Peel apples and dice into cubes of approximately equal size. In a large bowl, toss with maple syrup, water, and cinnamon. Pour apples into greased 9x9 inch baking dish. 2. In the same (now empty) bowl, add oats, almond meal, nuts, cinnamon, salt, coconut oil or butter, and maple syrup. Weight Loss Wonder Soup ingredients * 4 large onions finely chopped * 2 green peppers diced * 1/2 tsp olive oil optional * 3 large tomatoes roughly chopped * 1 bunch celery diced * 1 small cabbage chopped * 3 cup water or up to 5 cups for a more watery soup instructions 1. Start off by cutting up all the vegetables and separating them into three large bowls: onion and green pepper in the first bowl, tomatoes and celery in the second bowl, and cabbage in the last bowl. If you need tips on how to cut a green pepper, watch this video for a walkthrough. If you've never cut a cabbage before, watch this video on how to do it. 2. In a large pan, heat olive oil over medium-high heat. Add onions and green peppers to pan, tossing to coat. Sautee veggies until water has cooked out and onions begin to brown. The length of time this takes will depend on your cooking unit and the size of your pan, but for me, it took about 35 minutes. Turn the veggies every 3 to 5 minutes while cooking to prevent sticking and to check the color. When cooked, remove from heat. 3. In an extra large spaghetti pot, add the cabbage and water. Next, add the tomatoes and celery. Finish by adding the cooked onions and green peppers on top. Ingredients will likely be to be brim of the pot - this is okay. Do not stir soup yet. 4. Heat the soup over medium-high until water begins to boil. By this point, the veggies should have cooked down some, giving you room to stir. Once veggies are mixed, reduce heat so soup is simmering and cook for 50-60 minutes, stirring occasionally. 5. If desired, serve soup immediately. PEANUT BUTTER BANANA CHIA OATMEAL INGREDIENTS * 1 cup old fashioned oats * 1 banana, sliced (save a few for topping) * 1 Tablespoon chia seeds * 1 teaspoon cinnamon * pinch of sea salt * 3 cups of water, non-dairy milk or a blend of both * 2 Tablespoons peanut butter or another type of nut butter INSTRUCTIONS 1. Add oats, banana slices, chia seeds, cinnamon and sea salt to a pot. Add water and stir to combine. Heat over medium-high heat for 8-10 minutes or until all the liquid has been absorbed. Be sure to stir the oats several times while cooking to make sure the banana slices melt into the oats and the chia seeds don’t clump. You’ll know the oatmeal is done when all the liquid is absorbed and the oats are thick and fluffy. 2. Portion oats into two bowls and serve with peanut butter, banana slices, and a sprinkle of chia seeds. Creamy Chicken Tortellini Soup Ingredients: * 1 tablespoon DeLallo Extra Virign Olive Oil * 1 large sweet onion, peeled and chopped * 1 red bell pepper, seeded and chopped * 2 cups sliced carrots * 4 garlic cloves, minced * 1 1/4 pounds boneless skinless chicken breast (2 large breasts) * 9 cups chicken broth * 8.8 ounce package DeLallo Three Cheese Tortellini * 1/4 - 1/3 cup heavy cream * 2 tablespoons packed frozen spinach (1/2 cup fresh baby spinach leaves) * 2 tablespoons fresh chopped parsley * 1 1/2 teaspoons dried thyme leaves (1 tablespoon fresh thyme leaves) * 1/2 teaspoon crushed red pepper * Salt and pepper Directions: * Place a large sauce pot over medium heat. Add the olive oil and chopped onions. Saute for 3 minutes to soften. Then add the chopped bell pepper, carrots, and garlic. Saute another 3 minutes. * Add whole chicken breasts, chicken broth, dried thyme, crushed red pepper, 1 teaspoon salt, and 1/4 teaspoon ground black pepper to the pot. Bring to a simmer. Lower the heat a little and simmer 15 minutes, until the chicken in cooked through. Remove the chicken and place on a cutting board. * Turn the heat back to medium. With the broth still simmering, stir in the DeLallo Three Cheese Tortellini. Stir well so it doesn't stick together. Then chop or shred the chicken and place back in the soup. * Once the tortellini is cooked through, about 10-14 minutes, turn off the heat. Stir in 1/4 cup heavy cream, spinach, and parsley. Add a little more cream if desired. Directions: * Preheat your oven to 400 degrees F. Lightly coat a baking sheet with cooking spray. Cut each chicken breast in half lengthwise so that you have 4 pieces total. Pound each piece to an even 1/2-inch thickness. Set aside. * In a wide, shallow bowl (a pie dish works well), combine the Italian breadcrumbs, whole wheat Panko breadcrumbs, Parmesan, garlic powder, and pepper. In a separate bowl, whisk together the egg whites until lightly foamy. Cut the mozzarella into 4 slices, or grate and divide into four equal portions. * Arrange your work station in the following order: pounded chicken, egg whites, breadcrumb mixture, baking sheet. Working one at a time, dip each piece of chicken into the egg whites, shaking off any excess, then the breadcrumbs, gently patting the chicken as needed so that the crumbs stick to all sides. Place on the prepared baking sheet. Lightly coat the tops of the chicken with baking spray. * Bake until the chicken is cooked through (it should reach an internal temperature of 165 degrees F) and the crumbs are brown, about 15 minutes. Remove from the oven, spoon 2 tablespoons of sauce over each piece of chicken, and top with a slice of mozzarella. Return to the oven and bake until the cheese is melted, about 3-5 additional minutes.
